A Burnt Orange Kind of Thanksgiving!!

Texas Longhorns BEAT the Texas Aggies 27-25 on Thanksgiving Night!
Oh, What a game...I should have hit the BLACK Friday midnight openings because I was wide awake for hours after the game. The ATM aggies are leaving the BIG XII for the SEC....so this is possibly the last rivalry game for years to come...we may still play sometime in the future but the games will never mean the same. The UT/ATM game has been a family tradition in my family since I was born....I attended every game with my parents and grandparents (my Grandma was the only Aggie in our family)  from the age 1-27 then as my life got more independent...I missed games..but I still go to every home game and tried to get to College Station every chance I could....I should have gone this year...WHAT A GAME!! It is Goodbye to A&M...just as our fight song says....Good Luck Aggies....Good Luck with LSU every year...GEAUX Tigers!!

More BURNT ORANGE.... recipes we had for Thanksgiving...
I made the most unbelievable Sweet Taters Ever!
2011 Sweet Taters (they could almost be Dessert!)
A double recipe is a MUST!!
CRUST
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 stick butter -- melted (Do not omit or reduce this amount)

SWEET POTATO MIXTURE
3 cups mashed sweet potatoes, fresh or canned
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs -- well beaten
1 stick butter -- ( 1/2 cup) melted

Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.

Preheat oven to 350 degrees.

Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a mixing bowl in the order listed. Mix thoroughly. Pour mixture into buttered baking dish. Sprinkle the surface of the sweet potato mixture evenly with the crust mixture. Bake for 30 minutes. Allow to set at least 30 minutes before serving.

My Brother and I had a pumpkin pie cook-off....mine was a sure fine winner....Caramel Pumpkin Pie!?!? Well....it didn't win the competition..so I am sharing my brother's recipe....it was delicious...cream cheese in anything is AWESOME! My pie involved browning sugar....making homemade caramel.....such a complicated process...but this pie won HANDS DOWN...Congrats, Bubba!!!
Matthew's Grand Prize Pumpkin Pie ~ 2011

8 oz Creme Cheese, Softened
2 C Canned Pumpkin
1 C Sugar
1/2 C Brown Sugar
1/4 t Salt
1 egg, Plus 2 egg yolks, slightly beaten
1 C half-and-half
1/4 C melted butter
1 t vanilla extract
1 t ground cinnamon
1/4 t ground ginger
1/4 t ground nutmeg
1/4 t ground clove

Whipped Creme, for topping
Preheat oven to 350-degrees

Bake DEEP dish pie crust as indicated (if it's not a deep dish pie crust, you'll be able to make 2 regular-depth pies...not as good, but will work!)

For filling: in a large mixing bowl, beat creme cheese with hand mixer. Add the pumpkin and beat until combined. Add the sugars and the salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half and melted butter, and beat until combined. Finally add the vanilla, cinnamon, ginger, nutmeg and clove. Beat until combined.

Pour filling into the warm prepared pie crust, bake for 50 minutes or until the center is "set". Place pie on wire rack until cooled to room temperature. Cut and top with whipping creme.

Texas / OSU Football 2010

 
Annual Cousin Tradition
~ UT / OSU Weekend ~
ATX
The Longhorn Team won golf at home...but the Cowboys came out
on top at the football game. This is not a good season for Texas Longhorn Football.
It is a rebuilding season? It is a very young team? That is what they say...
Do we NOT have another quarterback to try?
Wanting next season to get here quick...to see how it improves!

We began the day...with the "FIRST ANNUAL" UT/OSU FAMILY golf tourney...

After a nap we headed to the UT/OSU Football Game...
The final score was 33-16 ~ Cowboys win at UT Stadium first time since 1944.

Longhorn football and a 9/11 tribute....
The football crowd observed a moment of silence and then the
Longhorn Band played God Bless America.
Not a dry eye in the stadium ... everyone sang their heart out!
The jumbo-tron had a slideshow from 9/11..featuring
THE FIRST RESPONDERS. They are our HEROES!
"Horns up" during the moment of silence...
 
Following the 9/11 tribute...
we had a moment of silence for a Wyoming football player that was
killed in a car wreck this week.
The longhorn band played
the Wyoming School Song.
Everyone had their "horns-up" and again...there was not a dry eye in the house.
My prayers are with Ruben's sweet family ~ and with the three players that were
in the car with him. I personally know...what a hard time a team has
when they lose a dear friend and player.
The Horns take the field....Go, Horns, Go!!
The first quarter was long and dull...but the game perked up after that!
The victory line after half time was made by FIRST RESPONDERS.
Another tribute to the first responders of 9/11!

Another TEXAS LONGHORN win 34-7 over the WYOMING COWBOYS!
Next week....Texas Tech in Lubbock!

Longhorn Football 2010

The UNIVERSITY OF TEXAS SEASON OPENER ~ 2010~
Today, for most of us, is a very exciting day. The first game of the season. Hopes are high. We have every faith that this is our team's year. And even if it's not, we are dressed to the nines. This first game may not be the HARDEST or the  BEST game of the season...
but it means our season has started and we are contenders!!

I will be watching today's game on tv...we could have headed to Houston for the game...
but with ATX happens this weekend --->
Carol's 80th Margarita Birthday Party tonight and Onion Creek Golf...
we decided to stay home!

This is sure to be our year...Wear sunscreen and enjoy the game...!

Tailgating Beverage of 2010
THE BURNT ORANGE 
1 oz Paula's Texas Orange
1 oz Treaty Oak rum or other light rum
1 oz orange juice
1 oz Dr. Pepper
Fill a tall highball glass with ice
Add ingredients and top off with club soda and a wedge of fresh lime.

Hold your Horns high and HOOK'EM!

Campus Decor:
EVERYONE ELSE: Statues of founding fathers.
TEXAS: Statues of Heisman trophy winners.

Homecoming Queen:
EVERYONE ELSE: Also a physics major.
TEXAS: Also Miss America.

Getting Tickets:
EVERYONE ELSE: 5 days before the game you walk into the ticket office
on campus and purchase tickets.
TEXAS: 5 months before the game you walk into the ticket office on
campus, put name on waiting list for tickets, then still have to camp out.

Parking:
EVERYONE ELSE: An hour before game time, the University opens
the campus for game parking.
TEXAS: RVs sporting their school flags begin arriving on Wednesday for
the weekend festivities. The really faithful arrive on Tuesday.

Week of Big Game:
EVERYONE ELSE:  Don't even know who they are playing on Saturday.
TEXAS:  Make sure clothes are color coordinated, make signs to support the home team,
get cowbells ready, pray for a victory,
and bow down to football players when students see them.

Game Day:
EVERYONE ELSE: A few students party in the dorm and watch ESPN on TV.
Wonder why Game Day Live is never broadcast from their campus.
TEXAS: Every student wakes up, has a beer for breakfast, and rushes over
to where ESPN is broadcasting "Game Day Live"
to get on camera, cheer tirelessly, and wave banners.

Tailgating:
EVERYONE ELSE: Raw meat on a grill, beer with lime in it, listening to
local radio station with truck tailgate down.
TEXAS: 30-foot custom pig-shaped smoker fires up at dawn. Cooking
accompanied by live performance by "Hootie and the Blowfish," who come
over during breaks and ask for beer.
Televisions set up with satellite dishes so that we don’t miss any
Big XII football games shown before and after ours.

Getting to the Stadium:
EVERYONE ELSE: You ask "Where's the stadium?"
When you find it, you walk right in.
TEXAS: When you're near it, you'll hear it!

When National Anthem is Played:
EVERYONE ELSE: Stands are less than half full,
and less than half of them stand up.
TEXAS: 100,000 fans, all standing,
sing along in perfect four-part harmony.

Announcers:
EVERYONE ELSE: Neutral and paid.
TEXAS:  Announcer harmonizes with the crowd in the fight song,
with a tear in his eye because he is so proud of his team.

After the Game:
EVERYONE ELSE: The stadium is empty way before the game ends.
TEXAS:  Another rack of ribs goes on the smoker and planning of the tailgate
begins for next week's game.
Go, Horns, Go!
Beat the OWLS!
